Here are a couple of recipes from our latest cookbook…”More Cooking with Kettleby Herb Farms”

 

 

Herbs for Dips Mini Wraps  - Great  party treat!

 

Ingredients:

8oz       250g    Cream Cheese (light or regular) at room temperature

2tsp      10ml     KHF Herbs for Dips

1tsp      5  ml     fresh Dill

3                                Garlic Cloves-finely minced

1                                Roasted Red Pepper-finely chopped

1/4tsp   1.25ml  Cayenne Pepper

1pkg                Flour Tortilla Shells-Sun dried tomato or basil are good

 

 

Instructions:

1.                  For filling, mix all ingredients except Tortilla Shells together until well blended

2.                  Spread mixture on all six tortilla shells making sure to cover the entire surface.

3.                  Roll shells tightly, wrapping each roll in wax paper until ready to serve.

4.                  Store the wrapped shells in the original Tortilla shell packaging bag in the refrigerator until just before serving.

5.                  Each roll should be cut on an angle about ˝” (1cm) thick and placed on a serving platter.

 

Hint*  Filling is best if made at least a day ahead of time to allow flavours to blend together.

 

 

 

 

 

Seared Shrimp

 

Ingredients:

Med-Large                   Black Tiger Shrimps- suggest 4 to 6 per person.

2T        30ml                 KHF French Tarragon Oil or Olive Oil

3T        45ml                 KHF Almost Balsamic or White Wine Vinegar

2tsp      10ml                 Fresh lemon thyme-minced

2tsp      10ml                 Fresh lemon verbena-finely chopped

1                                  Lemon-zest and juice

 

Instructions:

 

1.                  Peel and devein shrimp and place in a bowl

2.                  In a separate bowl, combine all remaining ingredients and mix thoroughly

3.                  Pour mixture over shrimp and toss lightly to make sure all are covered with marinade.  Cover.

4.                  Let flavours soak into shrimp for about 20 minutes at room temperature or up to 2 hours in the refrigerator.

5.                  In a non-stick skillet over medium heat, cook shrimp in small batches.

6.                  Shrimp should be just pink, do not overcook or they will become tough.

7.                  Remove from pan and keep warm until all the shrimp have been cooked and serve immediately.

 

 

 

Fruit Memory Booster

 

Ingredients:

4oz             125ml   skim milk

˝                           Banana-sliced

1/3 cup       80ml     fruit in season-strawberries, kiwi, raspberries, peaches, melon

1 tsp           5ml       minced fresh ginger

˝ tsp          2.5ml    dried gingko leaves-crushed

 

Instructions:

  1. Place all ingredients in a blenders and blend for approx. 30 seconds until mixture is smooth.
  2. Pour into a large glass and enjoy!

 

Note* you can substitute banana with non-fat yogurt to add protein to mixture. An excellent start to any day!
